Caprese Salad with Grilled & Ready® Chicken Breast Strips
Ingredients
1 (11-ounce) package Grilled & Ready® Chicken Breast Strips
1 tablespoon oil
1 tablespoon water
2 cups cherry tomatoes, cut in half
1 cup mozzarella pearls
½ cup basil, rough chopped
salt and pepper to taste
1 tablespoon balsamic vinegar glaze
Directions
1. In a medium non-stick skillet place water and oil in pan and heat to medium high. Place chicken in pan and cook for 4 to 6 minutes, turning occasionally to ensure even browning. Cook to internal temperature of 170°F.
2. Toss cherry tomatoes, mozzarella pearls, basil, and salt and pepper in a bowl, mixing well.
3. Place chicken on top of salad and garnish with balsamic vinegar glaze.
