Southwestern Chicken Lettuce Cups

Ingredients

6 ounces Grilled & Ready® Oven Roasted Diced Chicken Breast

1 can black beans, 15 ounces, rinsed and drained

1 avocado, diced

1 cup brown rice, cooked

1/2 cup salsa

2 tablespoons cilantro, finely chopped

1 tablespoon lime juice, fresh

1 butter lettuce, 4 leaves

2 scallions, chopped

A restaurant-style appetizer, made in your own kitchen. Spoon a variety of ingredients like black beans, avocado, brown rice, and Grilled & Ready® chicken into crispy butter lettuce to make a hand-held dish that can’t go wrong.

Directions

1. Heat Grilled & Ready® Chicken according to package directions.

2. In a large bowl gently toss together beans, avocado, brown rice, salsa, cilantro and lime juice. Using four pieces of butter lettuce as "cups", divide mixture among lettuce cups.

3. Add chicken to each lettuce cup and sprinkle with scallions.
