Chicken and Black Bean Casserole

Ingredients

22 ounce Grilled & Ready® Fajita Chicken Breast Strips

15-1/4 ounce whole kernel corn, drained

15 ounce black beans, rinsed, drained

1 cup salsa verde

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1-1/2 cup Mexican cheese blend, shredded

1/2 cup tortilla chips, crushed, optional

Aromatic and exotic cumin and coriander gives this comfort food casserole a new look. Grilled & Ready® fajita chicken strips and an oven is all you need, along with all the salsa verde you want.

Directions

1. Preheat oven to 350°F. In a 2-quart casserole dish combine corn, beans, salsa, cumin, and coriander. Stir in Grilled & Ready Fajita Chicken Strips and 1 cup of the cheese.

2. Bake, uncovered, 35-40 minutes or until bubbly. Sprinkle with the remaining 1/2 cup cheese. Bake 3-5 minutes or until cheese is melted. If desired, sprinkle with crushed tortilla chips.
