Mediterranean Chicken Orzo Recipe
Ingredients
12 ounce Grilled & Ready® Chicken Breast Strips
16 ounce orzo pasta
1/2 cup sun dried tomatoes marinated in olive oil, diced
1/2 cup Kalamata olives, pitted, halved
1/3 cup fresh basil
2 tablespoon fresh lemon juice
2 tablespoon olive oil
1/4 cup grated Parmesan cheese
1 pinch salt and ground black pepper
This Greek-inspired dish combines orzo pasta, Grilled & Ready® chicken, and other Mediterranean favorites. Recipe provided by Robin Miller and Tyson Foods.
Directions
1. Cook orzo pasta according to package directions.
2. While orzo is cooking, combine chicken, sun dried tomatoes, olives, basil, lemon juice, olive oil and Parmesan cheese in bowl. Drain orzo and add to other ingredients.
3. Season to taste with salt and ground black pepper.
