Greek Chicken Tacos

Ingredients

1/3 cup (3 ounces) Grilled & Ready® Oven Roasted Diced Chicken Breast

1/4 cup romaine lettuce, shredded

2 tablespoons red onions, finely chopped

2 tablespoons roasted red peppers, drained and chopped

1 tablespoon Kalamata olives, roughly chopped

1 tablespoon light vinaigrette dressing

2 taco shells; use flat-bottomed corn shells, if available

2 dashes dried oregano

2 tablespoons feta cheese, crumbled

It’s a taste of Greece inside a shell of the Southwest. Mediterranean staples like feta cheese, Kalamata olives and romaine lettuce, combined with Grilled & Ready® chicken, inside a taco shell give you a culinary profile you’ve never tasted.

Directions

1. In a medium bowl, mix lettuce, onion, red pepper, olives and vinaigrette.

2. Divide chilled chicken between taco shells and sprinkle with oregano.

3. Top with lettuce mixture followed by feta cheese.
